*Tasting notes from Julie Dupouy – Down2Wine – Sommelier-consultant and wine educator – WSET Diploma –3rd at the 2016 World Sommelier Championship Colour : Clear, star-bright rose gold colour with silver nuances. Nose : clean, fresh and opened, with aromas of white peaches, ripe pears, lemon peels and hints of cardamon. After aeration, the nose reveals exotic nuances of star fruit and pineapple. Palate : dry, energetic, sleek and saline – aromatic expression of wild roses, grapefruit, lemon and fennel seeds. Ethereal and graceful, it glides on the palate leaving at the very end, a subtle tannic presence that brings texture and bite to the finish. The retro-olfaction carries flavours of hawthorn and fennel and lingers with a twist of refreshing bitterness. |

Food-pairing Temperature : 9-11° C.Tartare of seabream with lime and coriander. Grilled red mullet served with braised fennel. Fresh or semi-mature goat cheese. Grilled calamari with citrus and mint tabouleh.
